I’m leaving on a one week vacation now, so I’ll most propably be updating again on Tuesday the 24th or so. Anyway, that’s not the reason for goodbyes.
The reason for those, is that I trashed my very first sourdough on the other day – the one that I had gotten from Italy. I belong to that category of people who like to change their sourdough, instead of keeping it for 40 years or so. Why? Well, it’s a bit like changing bedsheets to me – sleeping feels so nice and fresh after that, and so does baking with a new sourdough.
I still have the tamagotchi I made a rough month ago alive, and well – I think after my holiday it’s time to start building the next one. I also recommend you to start from a blank table, if your sourdough has lost it’s “sour” smell or the bubbles are few (this doesn’t mean you couldn’t bake with the old one, nor does it mean there is necessarily something wrong with your dough – it’s just fresh sheets).
The leaven I have left gotto move into a clean jar that I got from throwing the other away, so here is a pic of it!
