I survived a week without electricity and running water – and actually, it wasn’t that difficult at all the scenery being so pretty and the hills being so nice and high to climb on.. And yes, it was intresting baking breadrolls and pizza with a gas oven – someone who has such, could tell me how do you deal with the flame coming from down so strong – it tends to burn the bottom and leave the top part raw, humm..
Anyway, the food in Lapland is gorgeous as well. I had the pleasure of eating some yummy reindeer meat and Lapland bread, rieska. Well, at least to me it is Lapland bread though it’s served all around Finland. I shall try to make that myself tomorrow – be posting you a recipe if it turns out ok!
And besides reindeer and bread, I also love the Lapland cloudberries, hilla in Finnish. Me and my sister found a couple enough to make a jar of jam for each. I’ve been now enjoying it with some also oh-so-lovely Finnish cheese, leipäjuusto, “breadcheese”. To go with those two I made some apricotbread – a bit “trashy” having no sourdough, but anyway good-to-go bread. Mmm.. All is so yummy in life!
