So, to keep going with my wholemeal experimenting, I did something radical; I turned my 100% hydration white leaven into 100% wholemeal leaven! It’s quite simple thing to do – instead of basic wheat flour start feeding your tamagotchi with wholemeal flour – and well, at somepoint you can start calling it a wholemeal leaven.
Will be interesting to see how this new thing works – wonder if something like wholemeal foccaccia could exist? Well, guess I’ll just have to figure it out..
And well, should again build another 100% white leaven. Incase I’ll be baking foccaccia for my little café in the future, would be nice to work with a fresh one. Taking so many days to build it, I shall start the process next week – so, happy baking ’till then!
